Melt some butter in a skillet, and remove the pie shell from the tin and break into pieces. Add the pie shell pieces and the smashed nuts to the butter in the skillet and cook, stirring, until crumbly and toasted. Smash up the big chunks with the back of your spoon. Pie deconstruction brings out the beast in me I guess with all this pounding and smashing going on!

Take a big whiff! Pie crust and nuts toasting in butter smells amazing! Toast until all the pieces are nice and crumbly and coated with butter. It should only take 4-5 mintues.

Now we're ready to construct the parfaits!! Divide the toasted pie crust crumbs evenly among your serving dishes, reserving a couple tablespoons for garnish. This easily makes 6 parfaits. I used 4 ounce glasses and could have even gotten 8 desserts if needed.

Top the pie crust crumbs with the reserved sweet potato pie filling. You can just use a spoon, or you can get all fancy and pipe it in. I piped because the glasses I used have a bit of a narrow opening, so it was easier for me to get the sweet potato filling all the way in there without making a huge mess!

Top the sweet potato filling with creamy Cool Whip and sprinkle on some reserved pie crust crumbs and you're ready to serve! No one will ever know this was made from a store bought pie!

I found the Mrs. Smith's Sweet Potato Pie and the Cool Whip together in the frozen food section at Walmart. It was so convenient to have them right there in one place! Even better I saved $1.00 with this coupon that is good through December 10th, 2014.

Sweet Potato Pie Parfait #ThankfullySweet

Ingredients

  • 1 Mrs. Smith's Sweet Potato Pie, baked
  • 1 (8 ounce) container of Cool Whip
  • 1 cup macadamia nuts, smashed (or your favorite nut)
  • 2 tablespoons unsalted butter

Instructions

  1. Carefully scoop the Sweet Potato out of the pie crust and into a bowl. Refrigerate until ready to use.
  2. Melt 2 tablespoons butter in a skillet, and remove the pie shell from the tin and break into pieces. Add the pie shell pieces and the smashed nuts to the butter in the skillet and cook, stirring, until crumbly and toasted.
  3. Divide the toasted pie crust crumbs evenly among your serving dishes, reserving a couple tablespoons for garnish.
  4. Top the pie crust crumbs with the reserved sweet potato pie filling. You can just use a spoon, or you can get all fancy and pipe it in.
  5. Top the sweet potato filling with creamy Cool Whip and sprinkle on some of reserved pie crust crumbs. Serve and enjoy!
Yield: 6-8 servings
Prep Time: 10 mins.
Total time: 10 mins.
