Lemon Curd Parfait #SundaySupper

Lemon Curd Parfait is ridiculously easy to make! The sweet tangy goodness of the lemon curd mixed with the creamy Mascarpone cheese makes for a refreshing treat any time of the year, but we especially like it in the hot summer months, which is why I chose this recipe for this week's #SundaySupper.

You can make a batch of my Luscious Lemon Curd in the microwave in less than 5 minutes!! It's true! Lemon Curd is super easy to make in the mircrowave and turns out great. Just be sure to whisk it good!!

I topped this with homemade whipped topping too. Have you ever made whipped cream at home? It's another ridiculously easy homemade recipe and is soooo much better than that store bought stuff!

Trust me! If you follow just a couple of tricks to ensure success, you'll be enjoying homemade whipped topping all the time. I really like how I can control the sweetness of my whipped topping, and there are no funny ingredients that I don't know how to pronounce! I've outlined the tricks in the recipe, so be sure to read it through before you get started!

On the bottom of this delectable dessert is a homemade graham cracker crust. No I didn't make the graham crackers - I'm not that good! I did take the time to mix them with some sugar and butter, though. These crumbs are super deee-licious! If you're like me, you'll want to just eat this stuff with a spoon!! But remember to save enough for the parfaits! The combination of the graham cracker crumbs topped with the tangy lemon curd and finished with a sweet homemade whipped topping makes for a dreamy ending to just about any meal! Enjoy!

Lemon Curd Parfait #SundaySupper

Ingredients

  • 1 batch Luscious Lemon Curd
  • 1 8 ounce container Mascarpone Cheese, softened
  • kosher salt
  • 1 sleeve graham cracker crumbs (1 1/2 cups finely ground crumbs)
  • 1/3 cup sugar
  • 6 tablespoons unsalted butter, softened
  • 2 cups heavy whipping cream, chilled (very important the whipping cream is very cold)
  • 2/3 cups sugar

Instructions

  1. Make up the Luscious Lemon Curd and allow to cool completely. Combine the lemon curd with 1 (8 ounce) container softened Mascarpone Cheese and a pinch of salt. Mix until smooth. Give it a taste and add more salt if needed. Cover and store in fridge until ready to use.
  2. For the graham cracker crumbs, place graham crackers into the bowl of a food processor (or a blender) and pulse until you have finely ground crumbs. Add 1/3 cup sugar and 6 tablespoons unsalted butter, softened. Pulse until you have a nice, moist crumb mixture. Give it a taste and add a pinch of salt if needed. Adjust the sweetness to your liking, but keep in mind the lemon curd and the whipped topping are sweet as well. Cover and set aside until ready to use.
  3. To make the whipped topping be sure your cream is chilled. Clean out the bowl of your food processor and place it, with the blade, in the freezer to chill a bit. Place 2 cups of very cold whipping cream into the bowl of the food processor and pulse about 1 minute until it just starts to thicken. Keep a watch on it so you don't over process it. Once it has started to thicken, add 2/3 cups sugar and a pinch of salt. Pulse another 30 seconds to a minute until it is whipped into cream. Don't over process or it will break and be ruined. Give it a taste and adjust the salt and sugar as needed. You can also do this with a mixer, but it does take a bit longer to whip into cream. Follow the same process using the whisk attachment. Or whisk by hand - which takes even longer and is a good workout ;) Cover and refrigerate until ready to use.
  4. When ready to assemble, place graham cracker crumb mixture in the bottom of your serving glass. Use as much or as little as you like. Top the graham crackers with the lemon curd mixture to your liking and finish it off with a big dollop of the homemade whipped cream. I sprinkle some graham crackers on the top as well. Serve immediately or refrigerate until ready to eat! Enjoy!
