Pistachio Pudding Cookies

An easy-to-make sweet green treat perfect for St. Patrick's Day!
Need a sweet green treat for St. Patrick's Day that is simple to make and tastes great?! I've got you covered! These Pistachio Pudding Cookies are made with a box cake mix!

A couple of years ago, Madison discovered cookies made with cake mixes and they won us over! When it comes to cookies, using a cake mix is an easy and quick way to make a variety of different flavors, and I love the soft texture.

I am crazy about these pistachio cookies! The nutty sweet taste is a nice change of pace for a cookie, and they are the prettiest shade of green! My favorite color!

The pistachio pudding is what gives them this beautiful green color that is perfect for celebrating St. Patrick's Day! Send these to school with the kids, take 'em to work, or just keep them all to yourself! No matter where they end up, they won't last long!
