French toast is surprisingly easy to make, and the butternut squash makes this a scrumptious way to get some healthy stuff into the kids! They'll never know this tasty breakfast is loaded with good-for-you stuff like folate, fiber, potassium, and vitamins B6 and C, just to name a few.

If you've never had butternut squash, it is similar to the beloved pumpkin, only better! The milder flavor and smoother texture of the butternut squash is much more appealing to me than that of the somewhat overrated pumpkin. 

Butternut squash is very versatile too. I have used it to make many different sweet and savory dishes such as Roasted Butternut Squash Soup, Oatmeal Butternut Squash Cookies, cheesecake, orzo, and even Butternut Squash Dinner Rolls!
