Heat a large skillet over medium heat and add chicken with an 18 ounce bottle of your favorite barbecue sauce. I use Sweet Baby Ray's Sweet and Spicy. Cook over medium heat until heated through. It should only take about 5 minutes and will be hot and ready once you have the bread toasted.

While the chicken is heating, melt 4 tablespoons butter with 1/4 teaspoon freshly minced garlic and a pinch of salt in the microwave. Be sure to use a microwave safe dish and heat on high power for 30 seconds or until melted.

Spread the melted butter onto one side of each piece of texas toast and place on a foil lined baking sheet. Set the baking sheet under the broiler for about 30 seconds to a minute until the toast is golden brown. Always remember to leave the oven door ajar while broiling and watch it carefully so you don't burn the toast! I like my sandwich just a little crispy with just a hint of softness, so I only toast one side of the bread.

When the toast is beautifully golden and a little crispy, remove it from the oven and divide the barbecued chicken evenly among 4 pieces of garlic toast. I put the chicken on the un-buttered side and then top each with another piece of toast leaving the toasty part on the outside. Serve with coleslaw and chilled Coca-Cola. Then relax and enjoy sitting down around the dinner table with the family while everyone savors the tangy goodness of this Barbecued Chicken Sandwich on Garlic Toast.
