I am honored to share this recipe with you. It is one of the many recipes found in my friend's new cookbook, The Magical Slow Cooker: Recipes for Busy Moms by Sarah Olson.
I have been a fan of Sarah's blog, The Magical Slow Cooker, for some time now, so I was thrilled when she asked me to review her cookbook! Y'all! You NEED this book! It has everything from breakfast to dessert ALL made in the slow cooker! I truly had no idea you could make such a variety of delicious recipes in the slow cooker! Imagine having nearly 100 easy recipes your family will gobble up! With very little prep time, Sarah's recipes are made for busy moms!
I had a difficult time choosing which recipe to feature in my post. Should I go with a delicious breakfast recipe such as The Raisin Bread French Toast Casserole? Or maybe a new appetizer recipe for Madison's upcoming graduation like the Italian Beef Sliders? How about a dessert recipe like the Peach Cobbler? I couldn't decide!! I enlisted Don's help, but he just wanted me to make everything haha
Recently, I started eating low-carb, so I decided to stick to my diet and enjoy the Cilantro Lime Chicken. Cilantro and lime is one of my all-time favorite flavor combos, and I'm always on the lookout for new chicken recipes, so this was a perfect choice!
There is very little prep time for this recipe. It took me less than 10 minutes to get everything in the slow cooker and turn it on! How awesome is that?! The chicken cooked for 2 1/2 hours and then I put it in a 500°F oven for about 10 minutes to brown the drumsticks. So easy!!
The chicken is crispy on the outside and fall-off-the-bone tender - just the way I like it!
Thank you for the wonderful cookbook, Sarah! I can't wait to work my way through the rest of the recipes!! Don thanks you too! He is super excited and can't wait to see what I make next <smile>
Buy Sarah's book to experience the magic of your slow cooker every day of the week!
