Don helped by being the official taste tester. I first topped a European Biscuit with the yummy fruit dip and strawberries, but the cookie overpowered everything, so I fixed him up another one using good ol' Nonni's Biscotti Bites in Dark Chocolate Hazelnut. He declared that the winner!! The flavors work very well together. So well, Don kept eating them!! I had to tell him "SLOW DOWN!! I need to have some left to photograph tomorrow!!" haha

Strawberry Dessert Bruschetta

Ingredients

  • 1 (8 ounce) package cream cheese, softened
  • 1/2 cup brown sugar
  • 1/4 teaspoon vanilla extract
  • pinch of salt to taste
  • Fresh strawberries, hulled and thinly sliced
  • Biscotti Bites - I used Nonni's in Dark Chocolate Hazelnut

Instructions

  1. Beat softened cream cheese with a mixer until whipped. Add 1/2 cup brown sugar, 1/4 teaspoon vanilla, and a pinch of salt until the dip is mixed well. Give it a taste and add more sugar, cinnamon, and/or salt to your liking. Cover and refrigerate for several hours until ready to use. This definitely gets better after chilling in the fridge, so be sure to make it up ahead of time.
  2. To assemble, take 1 biscotti bite and top it with the cream cheese fruit dip and pile on the strawberries! Enjoy!
