With the big game being hosted in New York, I was tasked with creating a delicious Football Game Day appetizer inspired by Manhattan's famous Chinatown. Chinatown is known for being a lively neighborhood full of good restaurants and food shopping! I had so many ideas, it was difficult to settle on just one recipe, but the Asian inspired sauce on these wings is deee-vine! At first taste I thought I had died and gone to heaven! Angels were singing!! It was a sign!! I just knew it was the right choice!
- 3 lbs chicken wings
- 2 eggs beaten
- 2-3 cups crushed RITZ Crackers
- 32 ounces Canola Oil
- 1/2 cup Apple Cider Vinegar
- 3 tablespoons soy sauce
- 3 tablespoons water
- 1 cup brown sugar
- 1/2 teaspoon salt
- 3 Serrano Chile Peppers, seeded and minced
- 1 tablespoon fresh grated Ginger
- In a small saucepan, combine 1/2 cup apple cider vinegar, 3 tablespoons soy sauce, 3 tablespoons water, 1 cup brown sugar, 1/2 teaspoon salt, 3 serrano chile peppers (seeded and minced), and 1 tablespoon fresh grated ginger. Tip: Freeze the ginger for easier grating. Bring this mixture to a gentle boil, stirring frequently. Continue cooking and stirring until reduced down by 1/2 - about 20 minutes. The flavors will intensify as the sauce thickens and becomes syrupy. Allow sauce to cool. This will yield about a cup of sauce.
- Preheat oven to 350 degrees F. Begin heating canola oil in a 2.5 quart saucepan to 375 degrees F. Be sure to use enough oil so your wings will be submerged. Rinse wings and pat dry. Crush 3 sleeves of RITZ crackers in a food processor to a fine crumb and put in a bowl for breading. Tip: I work with about 1 cup of crumbs at a time adding more as needed to keep the crumbs from getting soggy. Dip a chicken wing in the beaten egg and allow excess to drip off. Then coat chicken wing with RITZ cracker crumbs. Place chicken wing on a foil lined baking sheet and repeat until all chicken is coated.
- When the oil is heated to 375 degrees F, place 3-4 chicken wings in the oil and fry just until crispy. This will only take about 30 seconds if you oil is hot enough. Remove with a slotted spoon and place on a paper towel lined plate to drain. Continue to fry the chicken in this manner until all are crispy.
- Lightly spray 2 foil lined baking sheets with cooking spray. Lightly coat each wing with the prepared sauce and place on foil lined baking sheet in a single layer, trying not to crowd the chicken. Place baking sheets in the preheated oven and bake for 15 minutes or until wings are cooked through to an internal temperature to 165 degrees F. Allow chicken to rest for 10 minutes. Serve with reserved sauce and enjoy!
