Mmmmmm is there anything more delicious than fresh baked apples and cinnamon? I didn't think so, but apples, cinnamon, AND cake together in one moist, delicious, easy to make loaf just might be the answer to my dessert prayers!
I used a Pink Lady Apple (or Cripps Pink) in this recipe. I pretty much use the Pink Lady for everything apple these days. It has succeeded the Granny Smith as my favorite for both eating and baking.
This Apple Cinnamon Cake won't last long, so you'll probably want to make two!! I did! Okay, so I made 3! Don't judge! I gave one away :)
Recipe adapted from allrecipes.com Apple Cinnamon White Cake
- 1/3 cup packed brown sugar
- 1 teaspoon cinnamon
- 2/3 cup white sugar
- 1/2 cup (1 stick) of unsalted butter, softened
- 2 eggs
- 1 1/2 teaspoons vanilla
- 1 1/2 cups all-purpose flour
- 1 3/4 teaspoons baking powder
- 1 teaspoon salt
- 1/2 cup milk
- 1 apple, peeled and chopped
- Preheat oven to 350 degrees F. Grease and flour a 9x5" loaf pan. Cooking spray can give you a soggy bottom, so I recommend butter all over the pan and sprinkle lightly with flour.
- Mix 1/3 cup packed brown sugar and 1 teaspoon cinnamon together in a bowl or on a paper plate for easier clean-up.
- I used a Food Processor , but a mixer works too. Combine 2/3 cup white sugar and 1 stick of unsalted, softened butter in the food prep bowl and pulse until smooth and creamy.
- Add 2 eggs one at a time and 1 1/2 teaspoons vanilla until incorporated.
- Add 1 1/2 cups all-purpose flour, 1 3/4 teaspoons baking powder, and 1 teaspoon salt to the batter and pulse until just combined. While the processor is running pour in 1/2 cup milk until you have a smooth batter.
- Spread half the batter into the prepared loaf pan and top with half the cinnamon sugar mixture and half the peeled and chopped apple. Top with the remaining batter and then add the rest of the apples and cinnamon sugar mixture. Give the top layer a gentle swirl to mix the apples and cinnamon sugar with the batter.
- Bake in the preheated oven for 50-60 minutes. Remove from oven when the top is firmish and looks cooked through. If the top still looks jiggly and under-cooked, add more bake time, but be sure to check it every few minutes. Let cool completely and carefully remove from pan or slice it right in the pan and enjoy!
